They were virtually unheard of in the Northeast part of the country until around 1995, according to an article in the New York Times. The unique taste and texture of royal reds quickly gained popularity among seafood enthusiasts and chefs alike, leading to an increase in demand. They are found in water temperatures of about 50 degrees, usually in late winter, near where the continental shelf begins off the coast of the southeastern United States.
