My family loves my homemade cheesecake and this year my husband requested on for his birthday. Well, since I manage a farmers’ market, I thought it would be a good idea to make a home-made strawberry glazed topping for this decadent dessert.
This recipe was so good I’ll be making it for pancakes, sundaes, Holiday cheese blintzes and more… try it yourself with fresh strawberries from our farmers market, you’ll be thrilled you did!
Ingredients:
2 Cups chopped strawberries (fresh, of course, but frozen will work too if they are out of season.)
1/3 Cup of water (to cover strawberries)
1/3 Cup sugar
1 Tablespoon of cornstarch
1 Teaspoon vanilla
Directions:
-Put chopped strawberries and sugar into a small saucepan.
-Add 1/3 cup of water to cover, and stir.
-Heat over a medium-high heat, stirring frequently, until boiling.
-Reduce heat to medium.
-Mix 1 Tablespoon of cornstarch with 1 Tablespoon of water until blended well and liquid thickens.
-Pour mixture into strawberries and stir continuously for 3 to 4 minutes, until strawberries are thick, like syrup.
-Remove from heat and stir in the vanilla
Your glaze is ready to serve.
This recipe is good to make ahead of time and it keeps in the refrigerator well. If you’d like it in a more liquid form, simply puree your Strawberry Glaze Topping until you achieve your desired consistancy.
