This is one of Freddie’s fabulous recipes and it comes to us from everyone’s favorite lettuce producer, Bacon’s Select; a family farm that grows hydroponic lettuce. The Bacon family have been long standing vendors in the farmer’s market located in historic, downtown Fernandina Beach, Florida.
1 Clove garlic, finely chopped
1/3 Cup apple-cider vinegar
2T Dijon mustard
2T honey, heaping
1-1/2 T sugar
1 t Salt
1/4 t pepper
1/2 Cup extra virgin olive oil
-Combine garlic, vinegar, mustard, honey, sugar, salt and pepper in a small saucepan and whisk over medium heat.
-Bring to a simmer.
-Slowly whisk in the olive oil.
-Continue whisking until completely combined.
-Remove from heat.
-Serve warm over Bacon’s Select leccuce.
