Baked Zucchini Chips

Baked Zucchini ChipsHere is a flavorful and healthy subsitute when you are cravy something crunch, Baked Zucchini Chips. Summer can often leave us with a fresh abundance of zucchini on the kitchen counter and here is a great way to serve it up!

These chips are easy to make and are great to serve as an appetizer or as a side dish, best of all I haven’t found one person you would doesn’t like them.

Ingredients:
2 Zucchinis
1/4 Cup breadcrumbs
1/4 Grated Parmesan cheese
1/8 teaspoon black pepper
1 Egg
2 Tablespoons almond or low fat milk.

-Preheat oven to 425 degrees F.
-Grease a baking sheet.
-Slice zuchini into 1/4 inch thick chips
-Combine next three ingredients in a shallow bowl
-Whisk together the egg and milk in a 2nd shallow bowl
-Dredge each chip through the egg and milk mixture, then coat with the dry ingredients and place in single layer on the baking sheet.
-Spray the top of chips lightly with a cooking spray. (Flavored sprays like butter or Italian are wonderful.)
-Bake for 20 minutes then turn the chips over, lightly spray the tops with cooking spray, and return to the oven for another 10 minutes or until browned and crisp.
-Serve immediately.

You can add salt to your recipe, and I find the milk is optional, too.
